Blade innovation reduces the cost of slicing and dicing

As consumer demand for fresh-cut, minimally processed, and portion-ready fruit and vegetable products continues to grow, food processing companies need equipment that is more adaptable. Simpler design for greater flexibility

Possibly the most important feature of the Little Gem Aspire is the StatiCut knife assembly — a patent-pending innovation that replaces the traditional circular knife assembly with a system that provides greater flexibility across cut sizes and patterns. Users can switch from one cut size to the next quickly and easily, without the complexity typically associated with changeovers.

“Typically, blades in slicing and dicing machines are circular rotating blades that require a drive and transmission. By using static knives, the produce is pushed through the blades and there are minimal moving parts and the overall footprint can be smaller,” said Paul Frederick, Territory Manager, Urschel Products at Heat and Control.

The machine produces flat slices from 2 mm to 20 mm, strips, and dices up to 20 mm, making it suitable for a wide range of produce — from apples, mangoes, and strawberries to carrots, onions, potatoes and butternut pumpkin. For small manufacturers, catering service providers, boutique greengrocers and farm-gate produce suppliers, this kind of versatility in a single compact machine is highly valuable, and allows operators to produce multiple types and size of cut in a single machine that provides easy adjustment.

The importance of product consistency cannot be understated, and the Little Gem Aspire is designed to address this directly through Urschel’s precision cutting technology, engineered through extensive R&D and refined through trials with Urschel customers worldwide. The result is a dicer that delivers reliable, repeatable output across every production run — whether processing firm root vegetables or more delicate fruit.

Reduced cost of ownership for small producers

The Little Gem Aspire has been engineered with total cost of ownership for the small processor in mind. The straight knives of the StatiCut system result in fewer differing parts to maintain and inventory, which directly reduces ongoing operational costs and the administrative burden of spare parts management and blade sharpening.

“Being easily replaced, the blades are designed to be disposable and require no sharpening, making maintenance simpler,” said Frederick. “Not only that, all adjustments and blade replacements can be performed with a single tool.”

The machine’s compact footprint also means it can be integrated into facilities where space has previously been an issue. With a footprint of only around 1 m2, it is not necessary to reconfigure a production line or to allocate large amounts of space in order to accommodate it. The ‘ready to run’ design also means that the time between installation and productive output is minimised.

In Australia and New Zealand, Heat and Control are the exclusive representative of Urschel equipment, offering cutting sets, spare parts and product testing services.
