DKSH Z-Trim multifunctional zero calorie fibre

Z-Trim is a multifunctional zero calorie fibre that can substitute up to 50% fat in a variety of food applications without contributing kilojoules to formulation. It also adds healthy fibre while maintaining taste, texture, appearance and overall finished product acceptability. Z-Trim is taste neutral and does not require masking for palatability.

Suitable for bakery lines, the fibre is a fat replacement for butter, margarine or oil, and reduces calories, saturated and trans fat levels and increases fibre content. Its incorporation in biscuit formulations will also reduce potential breakage.

The product can also be used in sauces, dressings, mayonnaise, dips, cream cheese, ice-cream, yoghurt, dairy beverages, snack foods, fried and processed meat products. It also acts as a fat barrier during frying and can be included in batters, breadings and fried snack food applications.

The fibre is ph, heat and freeze/thaw stable, has strong emulsifying potential, is GMO free and can be labelled as fibre.
