Butter replacement for low-fat baking

Delyte6 is a tapioca-based ingredient that is claimed to be able to replace butter in cakes, breads and pastries and so cut the fat content of the product by up to 97%.

It is a powdered tapioca starch that is then mixed with water and used to replace butter in bakery products. Without changing any recipe, the mix can be used to replace up to 50% of the fats, but if the manufacturer is willing to reformulate, it is claimed that this percentage can be increased to 97%.

Delyte6 is a clean label ingredient so bakers using the product do not legally have to signify its presence on the list of ingredients.

It will be launched primarily in the UK and Ireland this year.
