GoldPeg’s continuous cooking and cooling system, the RotaTherm CUBE, cooks and processes a wide range of food products such as processed cheese, baby food, sauces and many more to a high standard.

The versatile RotaTherm is the core technology of the CUBE. The RotaTherm is particularly distinguished by adjustable heating and processing parameters including cooking temperature, direct steam injection heating profile, shear, pressure, mixing and many others - all with a precise level of control. With dimensions of only 1.6 x 1.6 x 1.6 m, the compact RotaTherm CUBE delivers a solid production punch with throughput rates of up to 1000 kg/h and a cooking temperature range up to 145°C and direct vacuum cooling down to 60°C.

GoldPeg’s GPiCS Mozzarella Cooker Stretcher is a low pressure, low shear, direct steam injection continuous cooking and stretching system. A fully enclosed hygienic system, GPiCS is specifically designed to produce sensitive natural mozzarella, string cheese and pasta filata cheese varieties without bath cook water.

Sensitive to the environmental and effluent pressures on food manufacturers, GPiCS was developed with the support of an Australian Government grant and extensive testing at CSIRO Australia.
