Datapaq Food Tracker temperature measuring system
Datapaq has released the Food Tracker profiling system - a multi-channel method of measuring the actual product and ambient temperature throughout cook/fry/chill processes.
Consisting of the MultiPaq21 data logger, stainless steel thermal barriers, Insight software and thermocouples, specially designed food, the system can record product and oven/fryer/freezer temperatures up to 400 and down to -200°C. With a rechargeable battery that lasts for up to 250 hours between charges, users can store up to eight separate runs before the data is downloaded. The thermal barriers are rated IP65 and IP67 to withstand showers and immersion in liquid.
The Food Tracker Insight software will analyse and document the temperature data for HAACP compliance, including lethality calculations and F0 values. In addition, detailed analysis of the collected data will provide information leading to shorter cooking times for increased yield, reduced costs and improved consistency.
