GoldPeg GPiCS dry cooker stretcher
The Gold Peg GPiCS dry cooker stretcher produces sensitive, natural mozzarella and pasta filata varieties continuously, with no cook water, with identical composition, sensory and functionality to a traditional wet cooker product.
The cooker stretcher is a direct steam injection system that was specifically developed with the support of an Australian government grant and extensive testing at CSIRO Australia.
Gold Peg specialises in direct steam injection cooking and processing technology and the company identified a need for a more efficient continuous cooking system for sensitive mozzarella and pasta filata products that was also sensitive to the environmental/effluent pressures on food manufacturers.
The cooker stretcher is a low-pressure, low-shear, direct steam injection continuous cooking system which responds to the needs of sensitive natural mozzarella and pasta filata specifications. Its flexibility allows it to produce of a full range of natural mozzarella, string cheese and pasta filata varieties.
The GPiCS is an extension to the company’s cooking and processing equipment range, which includes the RotaTherm continuous cooker.
