Detect bone in chicken fillets

The Marel SensorX system analyses each chicken fillet for bone content. The easy-to-operate system displays detected bones on a display terminal for easy removal.

Fillets containing bones are delivered to an inspection station that comes equipped with its own high-resolution display terminal, which highlights the bone location in colour. Using this as a guide, the operator removes the remaining bones without damaging any flesh, and returns the fillet to the conveyor and on for further processing.

The operator enters the relevant information for database storage, along with detailed data regarding bones detected for reporting. When there are no bones detected, the sampling continues for the purpose of constantly gathering quality data for the deboning process improvement. The SensorX system can process approximately 125 single fillets/min and about 70 butterflies/min.
