New Vic facility to teach chocolate and gelato craft

A new $795,600 teaching facility dedicated entirely to the art of making chocolate and gelato has opened in Victoria.

The Gelateria and Chocolateria training facility has opened at the William Angliss Institute’s Melbourne CBD campus and will offer TAFE students the chance to learn how to craft chocolate and gelato.

It is said to be the only location in Australia to teach a traditional gelato-making technique from Italy due to a partnership with Carpigiani Gelato University — a university wholly dedicated to the academic pursuit of ice cream.

The facility will double the number of people who can study a Cert IV in Patisserie, Diploma of Food science and Technology, and the dual qualification in Patisserie and Commercial Cookery, as well as online courses and industry training. It has specialist facilities for chocolate and ice cream making, along with ceiling cameras and touch screens to enable annotations. Streaming of live classes and demonstrations will be possible for online students thanks to these technologies.

“This new Gelateria and Chocolateria is an absolute treat for people who want to hone their chocolate-making skills or to study traditional Italian gelato-making — before making their mark on Victoria’s hospitality industry,” said Victorian Minister for Training and Skills Gayle Tierney.

“Our investment in this facility is just one example of our continued support for TAFE and training — allowing Victorian jobseekers to get world-class training in their own backyard while ensuring local industries prosper.”
