The DSC 1 is a differential scanning calorimetry (DSC) instrument that can be used to optimise the roasting process and quality control of peanuts. Over- or under-roasting peanuts can significantly affect the colour, flavour, texture and shelf life of the end product.

Differential scanning calorimetry is a fast and easy technique that can be used to establish criteria for the optimisation of raw material selection and the roasting process of peanuts. The DSC 1 profiles can provide valuable information on the temperature and time conditions required for optimum texture, flavour and colour, as well as determining the effect oil-roasting has on the undenatured nonarachin and arachin proteins of the peanut.

The DSC 1’s modular design makes it suitable for manual or automatic operation, from quality assurance and production through to research and development. The DSC uses a patented DSC sensor with 120 thermocouples which the company claims gives unmatched sensitivity.
