Taura Natural Ingredients URC high-performance fruit range
Manufactured with Taura’s Ultra Rapid Concentration process technology, URC high-performance fruit pieces are designed by food technologists specifically for sweet biscuit and bakery applications.
Developed to meet the market demand for functional, soft fruit pieces, the fruit range offers manufacturers a real fruit solution with bake stability and moisture control tailored to suit commercial baking operations. With URC pieces, a real sense of fruity freshness is achieved, which is difficult to create from traditional dried or artificially flavoured products.
The fruit range includes strawberry, cranberry, orange, apple and apricot pieces and flakes. Kosher, halal and vegetarian certification is available.
The fruit pieces are claimed to be preservative free and have low water activity (0.3 to 0.4 Aw), which makes them suitable for crackers and bread crusts with 3-5% moisture.
Taura claims its technology allows the fruit pieces to remain soft, whole and visible, rather than disappearing or being absorbed into the baked application when exposed to heat.
