Tate & Lyle Soda-Lo Salt Microspheres for salt reduction

Tate & Lyle has launched Soda-Lo Salt Microspheres, a salt reduction ingredient that tastes, labels and functions like salt. The company says the product enables food manufacturers to reduce salt levels by 25 to 50% in various applications without sacrificing taste.

The Salt Microspheres have been created using technology that turns standard salt crystals into free-flowing crystalline microspheres. These smaller, lower-density crystals efficiently deliver salty taste by maximising surface area relative to volume. Because Soda-Lo is made from salt, it has none of the bitter aftertastes or off-flavours that can be associated with other salt compounds or substitutes.

The company says the product has been tested and shown to work well in a variety of foods including baked goods, breading, coatings and salty snacks. Testing has shown that consumers perceive parity tastes between products made with regular salt and foods containing Soda-Lo.
