There is a real threat to food manufacturers from deliberate malicious attacks, food fraud, including substitution, and the possible risk of adulteration. While HACCP ensures the food safety of our food supply, Threat Assessment Critical Control Point (TACCP) has been introduced to help businesses identify or deter deliberate acts that aim to cause harm to the food supply.
This course provides knowledge and skills required to develop and implement a TACCP study. Three case studies highlight the potential threats that may occur to an organisation and a series of in-class exercises will assist in the development and implementation of a TACCP study.
