AIFST Food Ingredients Series - Melbourne

This session on gelling stabilisers is the second in the AIFST Food Ingredient Series, which will be presented to provide current and relevant information about the different ingredients used for food production.

The series is part of the AIFST CPD program and is suitable for anyone involved in the application of food ingredients. 

Topics to be covered include:

  • Pectin
  • Carrageenan
  • Gelatine
  • Pre-gelatinised starch

This interactive session will provide attendees with a forum to present any issues associated with using gelling stabilisers as well as hands-on demonstrations of ingredient usage. Attendees can email their issues or case studies prior to the session to bronwyn.graham@aifst.com.au.
